Fiesta Chicken in the Crockpot Recipe

This is a great recipe that I am actually making for dinner tonight brought to you from Raining Hot Coupons!!!

  • 4 chicken breast (frozen or raw – we use frozen to make it easier and cheaper)
  • 1 packet Fiesta Ranch dip (find this by the salad dressing)
  • 1 can corn not drained (use the liquid and all – it adds to the flavoring)
  • 1 can black beans (I drain mine)
  • 1 can diced tomatoes (if you want it a little spicier, you can use Rotel)
  • 1 block cream cheese 

  1. Add all ingredients – no need to stir them, just add! 
  2. Cook on high in the slow cooker for 4 hours (or you can do low for 6 hours)
  3. Shred chicken with forks and put back in the sauce – stir together (it’s a little soupy but we like it this way if you want it thicker, just leave the lid off for about 20 minutes and it will thicken up).
  4. We eat this with tortillas
